Degree Level/Concentration: Nutrition and Dietetics
Veronica Thompson earned her undergraduate degree in Food/Nutrition and Dietetics from Illinois State University in 1999. After gaining 2 years of clinical experience in pediatrics and neonatal nutrition at Loyola University Medical Center, she completed the dietetic internship program at Loyola University Chicago in 2002. During the internship, she taught nutrition classes to high school students at Proviso East High School. As a Registered Dietitian, she has over 6 years clinical nutrition experience, most recently working in San Francisco at a major medical center. In 2006, Veronica completed a course in TESOL, Teaching English to Speakers of Other Languages. During 2007, she taught English in Vietnam to children and adults. Now, she plans to focus her career in wellness, weight management and education.
