Healthy Table: Spring is here!

Out with the winter root vegetables and in with the fresh and inspiring spring produce. Vegetables like bright green snap peas and asparagus, or sweet fruits like cherries and apricots, make eating healthy this time of year easy and enjoyable.  The highlighted items on most seasonal menus include peas or pea tendrils, mushrooms, ramps, rhubarb and artichokes.  Be daring and pick up something you have never tried before. Shop at a local farmers market for some fresh air and great prices. Check out the list for opening days below.

Logan Square: Sundays from 10:00 a.m.-3:00 p.m. (open now)
Palatine: Saturdays from 8:00 a.m.-12:00 p.m. (open now)
Wheaton: Saturdays from 8:00 a.m.-2:00 p.m. (open now)
Villa Park: Sundays from 8:00 a.m.-1:00 p.m. (open now)
Lisle: Saturdays from 8:00 a.m.-1:00 p.m. (opens May 6)
Oak Park: Saturdays from 8:00 a.m.-2:00 p.m. (opens May 20)

By incorporating more fruits and vegetables on your plate, you will able to stay full without the extra calories and fat. This will also help avoid most meal lethargy, giving you more energy to stay focused throughout the day. Plus, fresh produce keeps meals interesting! Try new recipes, cooking techniques or swap winter ingredients with spring ones for a rejuvenated twist. Here are some meal ideas to get you started.

  • Poached salmon and lemon-herb vegetables
  • Pea, mint and spring onion soup
  • Empanadas stuffed with spinach, fava beans, green beans and mint
  • Panzanella with radishes and asparagus (instead of tomatoes)
  • Artichoke and arugula pizza topped with prosciutto
