Professional Biography:

Catherine Arnold earned her doctorate in Educational Psychology from Northern Illinois University (NIU), with her focus of study in the areas of learning, assessment, and evaluation, and completed a Graduate Certificate in Advanced Quantitative Methods in Education. Dr. Arnold completed graduate coursework in exercise physiology at Benedictine University, and a Master of Science degree in Clinical Nutrition at Rush University in Chicago. She earned her B.S. in Clinical Nutrition from Benedictine University.

Prior to joining the faculty at Benedictine University full-time in 1990, she worked as a medical dietitian, community educator, and consultant dietitian. Dr. Arnold was the recipient of several awards from external organizations, including a regional award as Outstanding Dietetics Educator from the American Dietetic Association (1996), Alumnae of the Year (2004), and recognized in Who’s Who in American Education (2007). She was tenured at the University (1996) and is the recipient of a University faculty Service Award (2005). She has served as the Nutrition Program Director for 14 of her 17 years at the University. She is currently the Nutrition Department Chairperson, Professor of Nutrition, and Assistant to the Provost to assist coordinating University assessment.

Dr. Arnold's research interests include Determining Predictors of Health Behavior Change, Educational Assessment, and Nutrition Education Outcomes Research. To support her endeavors, she has been successfully funded by five granting organizations for over $100,000. Over the past ten years she has delivered 40 presentations at state, regional, national, and international conferences, 20 of which had an acceptance process. In addition to a couple of peer-reviewed research publications and publication of a cookbook, she served as a section author for two editions of the Diet Manual, published by the American Dietetic Association, and had 12 research abstracts from her national and international presentations published in peer-reviewed journal publications. Professionally active, Dr. Arnold is a past President of the Illinois Dietetic Association, and currently the Co-Chair of the Association’s Strategic Planning Committee. She is serving as an appointed member of the national Nutrition Counseling Evidence Based Practice Task Force of the American Dietetic Association. For more information, refer to her vita.

When not at work, you are most likely to find her spending time with her husband Steven and daughter Elliana, reading (usually a medical mystery), scrapbooking, or gardening in the summer.
