Nutrition Major: Mission and Goals
Vision of the Future
The Nutrition Programs will be recognized at the community, state, national, and
international level for their leadership in developing optimal teaching and learning within nutrition programs. The programs will prepare future nutritionists, registered dietitians, and nutrition managers to address important food and nutrition issues that impact the quality of life of people.
Mission Statement
The undergraduate Nutrition/DPD Program will assure the provision and promotion of high-quality education for preparation of competent future nutrition professionals.
The program provides learners with a comprehensive interdisciplinary knowledge of the interrelationships of food, nutrition, and health.
Goals and Objectives
Learning Goals for the Nutrition Major
The general learning goals for the undergraduate Nutrition major are:
- To integrate the foundational knowledge of related disciplines (i.e., biological,
physical, and behavioral sciences, education, research, technology, communication, and management) into
the learning and application nutrition.
- To provide a foundation of applied knowledge of normal, clinical, and community
nutrition, nutrition education and counseling, food science, and management.
- To promote the development of problem solving and critical thinking skills.
Learning Objectives for the Nutrition Major:
To meet the specific knowledge and skills competencies outlined by the Commission on Accreditation for Dietetics Education of The
American Dietetic Association (refer to the DPD Guide to read the most
current Eligibility Requirements and Accreditation Standards for our Nutrition Program), upon completion of the DPD the nutrition major will successfully:
- Demonstrate knowledge, application, and integration of principles of health promotion and disease prevention with normal nutrition, medical nutrition therapy, and public health nutrition for varied populations.
- Develop beliefs, values, attitudes, and behaviors for professional practice, including:
- Effective and professional communication skills.
- Application of nutrition counseling techniques and group education principles.
- Applied knowledge of ethical principles.
- Apply principles of food systems, food science, and techniques of food preparation.
- Demonstrate knowledge and strategic application of principles of management theories and systems.
- Integrate scientific information and research into practice.
- Develop teamwork, cultural competence, problem solving and critical thinking skills.
