Guidelines
Benedictine University Catering provides full service catering both on and off campus. We cater events for small groups as well as large groups, with a wide range of services including meeting breaks, luncheons and dinners, barbeques and receptions. We take pride in offering the most comprehensive catering department in the area. The following steps will help you through the process of organizing your special event.

Reservations
For off campus events, the location reservation needs to be confirmed. Tables, chairs and other equipment need to be arranged by you and the location space reserved. For on campus events please reserve your event space with the Building Facility Manager prior to booking your event with Sodexho at Benedictine University. Requests for room set-ups, including tables for the food, should be made at this time. Please allow three hours for set-up and two hours for clean-up when reserving space.

Contacting the Catering Office
Contact the Retail Catering Manager at Benedictine University Catering at least 10 days prior to your event. You may call the office at (630) 829-6382 or stop by the office located on the second floor of the Krasa Center. This is the time for a thorough discussion of all specifics and details. We can assist you with making all the necessary decisions to determine which of the services we offer would best suite your needs. The office hours are Monday-Friday, 8:00a.m.-5:00p.m., closed on some holidays.

Delivery Fees
For those events occurring in the Krasa Center, no delivery fee will be charged. For events totaling less than $100.00 but delivered to campus buildings, a fee of $9.50 will be charged. For events totaling $100.00 or more and delivered to campus buildings, no fee will be charged.

Decorations
Decorations, flowers, candles and special event lighting can lend an added elegance to your catered affair. We work with talented designers and can accommodate any request. Additional planning time will be needed for these services. Charges will be assessed according to the items ordered.

Linen
As a standard, tablecloths and table skirting will be provided for events with a minimum total of $50.00 for all food tables. Linen is provided for breakfast, lunch and dinner. If you would like linen to be placed on registration tables, gift tables or other tables a fee of $3.00 per tablecloth and a $7.00 per skirt will be charged.

Attendants
Attendants are included with all served and buffet style lunch and dinner entrŽe meals. Attendants are not included in the price of breaks, receptions, or carver fee. We recommend that you have an attendant for all receptions and breaks with over 100 guests. If you would like to have an attendant present there will be a $30.00 charge based on two hours of service. For each additional hour a fee of $15.00 per hour will be charged.

Catering Equipment
As the host of the catered event, you are responsible for the equipment we have provided for the service of your catered event. Any missing or damaged catering equipment will be charged to your account, at replacement costs.

Simple Suggestions for Savings

  • Save on the delivery charges by having your beverages or meals picked up at the food service office. We only ask that you return all trays, coffee pots, etc. after the event. If not returned, your account will be billed for the replacement cost.
  • Order sack lunches instead of box lunches. This will avoid the extra cost of boxes. A sack lunch includes the following:
    • Sandwich
    • Soda/Juice
    • Bag of Chips
    • 1 pc. of Fruit
    • 2 cookies

Some other suggestions include:

  • Begin and end your food service event at the scheduled time.
  • When possible, schedule after meal meetings in a separate room. This allows our wait staff to clean up immediately following your meal.
  • Control your counts by asking participants to reply at least one week in advance. This will prevent us from preparing excess food.
  • If a resident student attends your event, you may be eligible for board credit for the student. You must give the food service office the student(s) name and social security number in advance.
  • Most customers are satisfied with fruit punch as a beverage. Avoid the cost of canned beverages by serving fruit punch at your events.
  • Allow your guests to go through the main serving line and eat their meals in a separate room, which can be reserved in advance. Your choices are abundant, and the price is considerably less than a served meal.
  • Allow us to assist you in ordering amounts of food for your event. We can help eliminate wasted food and save your budget.
  • Ordering pitchers of water instead of bottled water can save you a great deal. Bottled water tends to get expensive so you can choose the alternative to save your budget.
  • Avoid the cost of canned juice by serving juice in larger quantities.

Poached Salmon Served On Top of a Bed of Greens with Marinated Baby Squash, Sprouts and Enhanced with Our Lemon Dill Dressing.
